"Grandma's Eggplant Sandwich"

Except for the initial fry, that is EXACTLY how my grandfather and grandmother made eggplant. They also never put on mozzarella, just good romano cheese. I used to take those sandwiches to school and have kids drooling.

That is a great technique. I used breadcrumbs but I have recently gone without them and do not miss them. And if you are doing a sandwich, why do bread drums. I did not do a double fry like that, but I will try it.

I always used Pecorino Romano. I will add Mozzarella too sometimes, but the sharper sheep cheese is better.

It is a great dish for St. Joseph's Day and Lent (although then if you are a purist, the cheese is then replaced with breadcrumbs). I go with the old Kosher take that eggs are okay regardless (in Kosher cooking egg is both a dairy and meat).

Evi, Eggplant is almost as gaseous as sauerkraut.

My Sicilian relatives all made it like that until the 90's. Then they all got on a healthy eating kick and started roasting the eggplant slices( seasoned and brushed with olive oil) instead of frying...then layered in a casserole with sauce and pecorino romano cheese.
In fact, they stopped frying meatballs and sausage, too.
Still delicious!

I have roasted it and it is still good. Just not as good as frying it.

I do not get gas from eggplant, provided it is cooked. I get it from corn.
